Spicy Peanut Chicken Pasta Recipe September 17, 2010

2 pounds chicken thighs
1 tablespoon cooking oil
1 cup chicken broth
2 tablespoons honey
1/4 cup peanut butter (creamy or crunchy)
1 tablespoon cornstarch
1 tablespoon ground ginger
1/2 teaspoon hot pepper flakes (more or less, to taste)


Cut the meat into 1 centimeter pieces. Heat the oil in  a large skillet, add meat and cook over high heat until lightly browned; remove form pan.
In a bowl, whisk together honer, chicken broth, soy sauce, peanut butter, cornstarch, ginger, and pepper flakes. Pour mixture in skillet and cook stirring constantly until thickened and smooth. Put chicken back in with the sauce and cook for 2 or 3 minutes more.
Serve over hot pasta.
Serves 4-5 people.
