Sausage Gravy with Home Fries, Biscuits, and Eggs October 22, 2010

1 lb. Hot and Spicy sausage
12 oz. salt pork, thinly sliced
approx. 2/3 cups flour
2 qts. half-and-half or heavy cream.
6 medium potatoes, cut into chunks
1 can biscuits, or homemade biscuits
Eggs, made how you want them


Brown sausage and salt pork. Remove from pan with a slotted spoon, leave grease in pan. Place meat on  a plate with a paper towel to drain.
HOME FRIES: fry the potatoes in the grease from the meat. Season with salt and pepper. You may need to add a little cooking oil depending on how much grease your meat produces.
BISCUITS: while you’re making the gravy, cook biscuits as directed on package.
GRAVY: If you still have grease left over from the meat and potatoes, you’ll need it here. If not, use the butter and oil.
If you don’t have grease left, heat 4 tbsp. butter and 1 to 2 tbsp. Vegetable oil, if you have grease, heat that with a tsp. vegetable oil. Put flour in pan with grease/butter mixture, whisk well. Whisk cream into mix on medium heat, pouring it in a little at a time to prevent lumps. Season to taste; We use black pepper, cayenne pepper, a dash of pepper flakes, and a dash or two of hot sauce. Bring your gravy mix to almost simmering, then add meat back into pan. Simmer til as thick as desired, whisking constantly. ( If it doesn’t thicken up enough, add about 3 tbsp. cornstarch to 3 tbsp. water, mix well, then add to gravy as needed).
NOTE: Do NOT let your gravy come to a boil at any point of the procedure!!! Milk products can cause fires if left to boil!
