NOTE: All ingredients and amounts may be modified to taste. This is an approximate recipe, you can experiment too.
Ingredients:1 lb. hot-and-spicy sausage or chipotle. 1 lb. ground beef 1 medium onion 1 to 2 peppers of your choice four 16 oz cans of beans, your choice 1 to two 12 oz cans of tomato paste
Procedure:Brown meat on medium heat. Season to taste. We use salt, pepper, cayenne pepper, chili powder, cinnamon, and cumin. While meat is browning, dice the onion and the pepper(s). When meat is mostly brown, add onion and pepper(s) and soften. If needed, drain meat. Now for the secret ingredient: 1 tin of anchovies in oil. Add anchovies to pan, but don’t put in the oil! Add one can of tomato paste and stir. Turn off heat. Add eight cups of water to a stock pot. Add beans, and the liquid from their cans. Turn on heat to medium high. Season to taste, we use salt, pepper, garlic powder, chili powder, cayenne pepper, cumin, cinnamon, dry mustard, and 4 cubes of beef bouillon. Stir. Add meat to bean water, being careful not to splash. Stir, then taste. Add more seasonings accordingly. You may also need more tomato paste. Leave to simmer til desired thickness is reached, stirring occasionally.
