Crunchy Chicken Toes November 24, 2010

1 cup Honey Bunches of Oats cereal
1 cup plain bread crumbs
2 tbsp brown sugar
1 tsp salt
1/2 tsp pepper
1/2 tsp cinnamon
3 tbsp vegetable oil
2 eggs, beaten
15 oz”s of  chicken breast tenders, cut into 2 to 3 inch pieces


Preheat the oven to 375°F. Make the breading: pour the cereal into a medium-sized bowl. Crush it up with your hands. Mix in the bread crumbs, brown sugar, salt pepper, and cinnamon. Drizzle the vegetable oil evenly over the breading. Toss and turn it to mix the oil all through the bread crumbs and crushed up cereal. Pour the flour into another smaller bowl, and the beaten eggs in a third one. Turn the chicken in the flour, then eggs, and then in the special breading. Arrange the chicken toes on a nonstick baking sheet. Wash your hands now! Pour the extra cereal mix (if there is any) over the chicken.  Place the chicken in the oven and cook until crisp and brown all over, about 15 minutes. Remove from oven, and Enjoy!
