Sausage, Onion, and Cheddar Muffins March 4, 2011

I got the original recipe for this from a Sam Stern cookbook ( http://www.samstern.co.uk/recipes5.html ), and then we changed it around a bit! It’s a fun one to do, and they’re really good! Here’s the recipe:

Ingredients:

2 1/4 cups flour
3 tsps baking powder
1 tbsp sugar
1/2 tsp salt
good pinch of Cayenne
Pinch of dry mustard
4 tbsps butter
3 eggs
1 cup milk
1 1/3 cups shredded Sharp Cheddar
4 green onions, or 1 regular onion, finely sliced (we caramelized ours, but you don’t have to!)
1 small red chili pepper, or 1 jalapeno, de-seeded and finely chopped
3/4 lbs. of cooked sausage

Procedure:

Preheat oven to 375°F.
Mix flour, baking powder, sugar, salt, cayenne, and mustard in a big bowl.
Melt butter. Whisk the eggs and milk in another bowl, then add the WARM, not hot, butter. Mix the liquid mix into the dry mix, along with the cheese, onion, pepper, and sausage. Using a large metal spoon, fold, don’t beat, the ingredients until they just come together. The odd lump is okay, just try to retain air.
Spoon mix into a muffin tin. Bake 20 to 30 minutes, or til well-risen and golden.
