Not-So-Asian Mint Chocolate Chip Brownies March 11, 2011

So, to explain the title. We’ve been doing some Asian-inspired meals lately, and those are going to be posted later today, but then my Mom found these cool-looking chocolate chips on sale:

They’re mint and dark chocolate, and she decided that I needed to make brownies with them. I was very excited to have something new to try, and was anxious to see what color the brownies would turn out! I’ve posted a similar recipe before, but here it is again:

7 oz mint and dark chocolate chips (Usually only sold at Christmas time, you can substitute any other chips you like)
10 tbsps of butter
1 1/4 cups sugar
2 tsp vanilla extract
2 large eggs
1 extra yolk
2/3 cups flour
pinch of salt
Preheat oven to 350°F, and grease an 8 inch square pan.
Put the chocolate and butter(cut into tablespoon pieces) in a heat-safe bowl:
Melt the butter and chocolate:
Beat in the sugar and vanilla. Whisk in the two eggs and yolk. Mix in the flour and the salt:
Spoon mixture into prepared pan. Place extra chips on top if you like:
Bake for 40 to 45 minutes, or til a toothpick comes out almost clean.:
