So, my mom finally did it. She convinced me to sell my desserts.

I told her if I did, I was saving up to go one one of our church missions trips this year. Which means I have a looooooooong way to go, especially if I want to make it to Honduras myself.

So here’s the choices so far, and prices will come up shortly:

Cookie Dough and Nutella Peanut Butter cups. Awh yeah. July 20, 2012

Oh Pinterest, how I love you. The Madre and I were looking at Pinterest when we found this recipe. Talk about a yum moment. So we decided we were going to make them, since we already had to go to the grocery store. (Yessss ;)) But then we kept looking at Pinterest, and I had her click on a different picture to see if it had a recipe. No luck, just some outrageously priced sweets.

Which sparked our next conversation, which was how I should sell my stuff. Well it was less of a conversation and more of the Madre trying to convince me to sell things.

But then, we went to the store. And we were walking around and we passed the peanut butter, which i knew we needed. But you know what else was right next to the peanut butter? Nutella. Yeah buddy. So of course, I asked for a jar. I even said we could put it in our cookie dough cups. And honestly, asked probably wasn’t the right word. More like “begged.” And she hates when I beg, especially for something she really likes too. So needless to say, we got it. Yess!

So we took the recipe we had found, and changed some things around, and got these yummy treats! Enjoy!

 

Chocolate Chip Cookie Dough Peanut Butter Cups

2 1/2 cups milk chocolate chips

1/2 cup unsalted butter

1/3 cup packed brown sugar

1 teaspoon vanilla extract

1/4 cup creamy peanut butter

3/4 cup powdered sugar

2 tablespoons all-purpose flour

1/4 teaspoon salt

1/2 cup mini chocolate chips

Nutella

 

In a small saucepan, melt butter. Whisk in brown sugar until dissolved, then let it bubble for 1-2 minutes. Remove from heat and whisk in peanut butter. The mixture will be liquidy. Whisk in vanilla. Let sit and cool completely, about 20 minutes.

Prepare your muffin tins. (We didn’t have any liners, which the original recipe suggests, so we greased each little muffin holder a with Crisco and coated in powdered sugar, which definitely kept them from sticking, but it almost worked too well!! It was very hard to spread the chocolate on top of it, so next time i’ll use muffin liners or the plastic candy molds.) Melt 1 1/4 cups of chocolate chips. Drop 1/2-1 teaspoon of chocolate into each liner, then use a pastry brush to brush chocolate up the sides. Place in the freezer for 20 minutes. By this point the butter + sugar mix should be cool. Whisk in powdered sugar, salt and flour, until combined. Mix in mini chocolate chips(Funny story….apparently i didn’t let the mix cool enough, because when i put in the chocolate chips, they all melted. So we ended up with chocolate peanut butter cookie dough. Which was very much okay with me ;)). The dough will be wet, but pop it in the fridge for 15 minutes to harden.(Once again, funny story. Ours didn’t harden well either, so we just kinda scooped it in.)

Remove muffin tin and cookie dough, then place a little Nutella and a little cookie dough into the chocolate cups. Place back in the freezer for 10-15 minutes. Melt the remaining chocolate chips, then cover each cookie dough top with chocolate, smoothing with a spoon. Freeze again for 15-20 minutes.

Homeade Corn Dogs!!(:

 

Soo, it was 1:00. And the sibs and I couldn’t find anything to eat for lunch.

 

So, being myself, I just decided to look for something simple to eat. I remembered that we had a package of hotdogs in the fridge, but none of us really like them plain. So I thought I would look for a corn dog recipe. Thank you Foodgawker for finding me one!

Before we go any further, you probably don’t know this about me, but whenever I try to make something new, I get nervous. I mean really REALLY nervous. So I don’t normally try new recipes by myself, but we were really hungry. So I tried making these, and they weren’t that bad! A little difficult at first and I made a few mistakes, but they turned out better than I expected! Big accomplishment for this girl! (: They were a little bland, but a little ketchup cured that. I did them in our fryer, and I might have to make a few adjustments next time I do that. But here’s the recipe!

Adapted from A Cozy Kitchen:

(The recipe says it makes 4, but I got 8 out of it. I think 6 is the sweet spot though!)

2/3 cups of all-purpose flour
1/2 cup of yellow corn meal
1 tablespoon of baking powder
1 teaspoon of salt
1/4  teaspoon of baking soda
1/4 teaspoon of cayenne
1 egg
3/4 cup of milk
4 hot dogs or veggie dogs
4 tablespoons of cornstarch (for dredging)
4 skewers (cut to a 6 inch length)

Line a plate or baking sheet with paper towels, for when the corn dogs are done frying.

Pour your oil in a cast iron skillet, dutch oven, or deep fryer.  Heat over medium-high heat until your thermometer reads 375F.

In a medium mixing bowl, whisk together the flour, yellow corn meal, baking powder, salt, baking soda and cayenne. In a large bowl whisk the egg and milk.  Then add the dry ingredients to the wet ingredients all at once, mixing until just combined. Let it rest for 10 minutes. She transferred hers to a skinnier cup to dip, and I think it definitely made it easier!

While your batter is resting, lay your cornstarch on a baking sheet or big plate.  Place each hot dog on a skewer and roll in the cornstarch, being sure to pat off any excess.  Then quickly dip the hot dog in and out of the batter. Immediately place the corn dog in the hot oil. (Do it fast, because the batter was runny!) Be careful! The oil will be hot and may splash back at you.  Cook until the coating is golden brown, 4-5 minutes.  Remove with tongs and place on paper towels for draining.  Serve and enjoy!

These insanely awesome Cake Batter Cinnamon Rolls from last year?  I was in love with these. Thought they were the best things ever, and that cinnamon rolls couldn’t get any better.

Boy was I wrong. THESE are the best ones ever. Cookie Dough-stuffed Cinnamon Rolls. Yea buddy.

From How Sweet It Is, just like the other ones. Here’s the recipe!

 

Chocolate Chip Cookie Dough Stuffed Cinnamon Rolls

2 cups whole milk

1/2 cup vegetable oil

1/2 cup sugar

1 package dry yeast (or 2 1/4 teaspoons)

4 1/2 cups all purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

melted butter

cinnamon

sugar

Cookie Dough:
1/2 cup sugar
1/2 cup brown sugar
1/3 cup shortening
1/3 cup butter
1 egg
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cup flour
6 oz chocolate chips

Mix the milk, sugar and oil in a large pot. Scald the mixture, then let cool for one hour. When it has cooled (but is still slightly warm), sprinkle the yeast into the milk mixture and let it sit for a minute. Add four cups of flour and mix until a dough forms, then cover and let rise for at least one hour.

After an hour, add the remaining 1/2 cup of flour, baking soda and powder and mix. I use my hands to make sure the dough completely comes together. Flour your workspace and roll the dough with a rolling pin until it’s thin and somewhat rectangular, then brush with melted butter (as much as you want) and generously cover with cinnamon and sugar. Drops balls of your favorite cookie dough all over the cinnamon roll dough (we went pretty heavy on the cookie dough), then starting with the end away from you, roll the dough into a line towards you. Slice the rolls about 1 inch thick and lay in pans that have been brushed with melted butter. Let the rolls rise for about 30 minutes.

Bake at 400 degrees for 12-15 minutes.

 

Make sure you do set it to 400 degrees…because apparently 10 o’clock at night is too late to trust myself to turn the oven to the right temperature….Oh good times.

Tomorrow’s Happenings…and a really good recipe. February 4, 2012

So..tomorrow’s Sunday. The last day of my weekend. What am I going to do?

Well, go to church obviously.

Then come home and hang out with my fam and best friend. And help make lunch.

And maybe read my book some more.

And maybe try to convince myself that finishing my homework is a good thing. And starting projects before the last minute is too.

Yum. Ultimate Chocolate Chip Cookie n’ Oreo Fudge Brownie Bars. Find the original recipe and post here, and here’s our variation on it!

 

Best Brownies Ever.

1 cup (2 sticks) butter, softened (we used a cup of shortening, because we were out of butter)
1 cup granulated sugar
3/4 cup light brown sugar
2 large eggs
1 Tablespoon pure vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups (12 ounces) milk chocolate chips
1 pkg Double Stuffed Oreos (We used Peanutbutter Oreos….all I can say is YUM!)
1 Family Size (9×13) Brownie mix (We used a normal sized box, but a bigger one would have been nicer and easier to spread)
1/4 cup hot fudge topping

Preheat oven to 350 degrees F. Cream the butter(or shortening) and both sugars in a large bowl with an electric mixer on medium speed for 3-5 minutes. Add the eggs and vanilla and mix well to thoroughly combine. In a separate bowl, whisk together the flour, baking soda and salt, then slowly incorporate into the mixer until the flour is just combined(we just add the baking soda and salt and mix, then add in the flour. But maybe we’re just lazy…..). Stir in chocolate chips. Spread the cookie dough in the bottom of a 9×13 baking dish that’s been lined with wax paper and sprayed with cooking spray. Top with a layer of Oreos. Mix together brownie mix, adding an optional 1/4 cup of hot fudge topping to the mix. Pour the brownie batter over the cookie dough and Oreos. Cover with foil and bake at 350 degrees F for 30 minutes. Remove foil and continue baking for an additional 15-25 minutes(ours took about 25). Let cool completely before cutting — brownies may still be gooey in the middle when still warm, but will set up perfectly once cooled. Enjoy!!

To half this recipe for an 8×8 brownie mix, simply half the chocolate chip cookie dough ingredients.

Ellie’s Song update!♥ January 25, 2012

Well, I’ve already written to tell you about Gregg’s song for the little girl him and his wife are adopting, and here’s another update from him!

Things still going strong with the adoption! In the process of completing what is called a dossier and then it is a matter of waiting… and waiting… and then waiting some more.
I wanted to tell you all about an opportunity that has come up! Kxoj, the local christian radio station in Tulsa, has issued a battle of the bands. My brother and I are going to be making a music video to Ellie’s song to submit! The winner gets to open for Mercy Me’s Rockin Worship Road Show. I would love if we got the opportunity to do that for 2 reasons: 1. It would help us get the song some exposure helping us raise funds and 2. It would help raise awareness for adoption! One thing Tam and I have been praying for is that through our story there might be other families God calls to adopt! Then it’s not just Ellie’s life that will be saved but possibly dozens more!! The radio station picks the top 3 and Mercy Me picks the winner! Please be in prayer for us and that the Lord would have favor on the song!! Thank you all so much for your continued prayer and support!
